The properties of fatty acid esters mainly depend on their composition:

 

In terms of state, short-chain or unsaturated fatty acid esters are mostly liquids (such as vegetable oils), while long-chain saturated fatty acid esters are mostly solids (such as animal fats).

 

Regarding solubility, because they have lipophilic long chains and hydrophilic ester groups, they are primarily lipophilic, generally insoluble in water but soluble in organic solvents.

 

In terms of appearance and odor, most are colorless or pale yellow, with a mild, non-pungent taste.

 

Regarding stability, saturated fatty acid esters are more stable and less prone to oxidation; unsaturated fatty acid esters require more careful storage conditions.
